Five Reasons We Love Living in the Capital of Texas (Plus a Yummy Recipe!)

I’ve gotta be honest, I NEVER pictured myself living in Texas.

But when my little family needed to relocate, Austin just kept coming to the top of our list! I’m so thankful to call Texas “home” and here’s just a few reasons why. Reasons we love Austin Texas

 

Casual, Friendly, Weird Atmosphere

Austin is… different. Nobody seems to take themselves too seriously. People are eager to get to know you and generally laid back. And weirdness is celebrated! People dress to please themselves and their eclectic taste. They have crazy hobbies like Pogo sticking and playing guitar with their toes. I don’t feel judged and there’s never a dull moment!

Lots of Free Unique Entertainment

If the people are unique, so is the entertainment! There’s always crazy stuff to do, often times free. We recently attended a robotic contest and a summer solstice parade. I can’t wait till my kids are old enough to participate in the city wide water gun fight. And Austin has earned the title of live music capital of the world! SO many concerts, too little time. And again, many of them are free! Then you’ve got the lovely natural treasure to explore like Barton Springs pool and the other worldly Hamilton Pool. Ahh! So nice!

Low Cost of Living and Tons of Jobs

This is a major selling point and probably the reason that Austin is booming. The economy rocks! We’re so thankful to finally own a house and have a job that consistently puts food on the table. That was not a given in our other dwelling places. There are help wanted signs EVERYWHERE and real estate is climbing, so get here while you can!

Natural Living is Popular

If you’re a long time follower of the blog, you know I’m a natural living proportionate. Austin makes that lifestyle easy! It’s actually more common to see people babywearing than pushing a stroller. There are a million choices when it comes to birthing options too. Then of course there’s the abundance of farmers markets and general awareness about best farming practices. The local grocery stores even carry a large assortment of essential oils and kombucha!

Access to Great Local Food

Along those same lines, the food around here is delicious! Barbecue, Tex-Mex, Organic/Vegan… we’ve got it all! And people care about how their food is grown and where it comes from. Austinites are passionate about buying local.

Lone Star Eggs are locally sourced eggs that are so yummy and full of protein! I like to whip up a batch of these egg and hashbrown “muffins” at the beginning of the week and freeze them for a quick breakfast option that’s FULL of protein!

Egg and Hashbrown Muffins

 

Ingredients:

12 Lone Star Eggs
1/2 a bag of Frozen Hashbrowns
8 oz. of Cheddar Cheese
Salt and Pepper to taste

Additional Add-ins if desired…

Bacon

Sausage

Red or Green Peppers

Mushrooms

Directions: 

Pre-heat over to 400 degrees. Fill a regular sized muffin tin with frozen hashbrowns. Stick it in the oven to brown while you prepare the egg mixture. (I like mine extra crispy so I let it make for 20-30 minutes). Shred cheese, beat eggs and add desired mix ins to one bowl. Once hashbrowns are browned, add the egg mixture to the muffin tins. Back for 10-15 minutes, until the egg rises and browns slightly.
