When we started our “real food” journey a couple years ago, I knew one of the biggest challenges would be giving up on a lot of convenience food. To me, a quick meal takes less than five minutes start to finish.
One of our go-to items had been canned cream of “whatever” soup. We’re a casserole lovin’ family and it seemed that every recipe called for at least one if not THREE cans of the stuff.
But after learning more about all the junk that is put into processed foods, these soups ranked high on the “no no” list.
Was I supposed to throw out all my comfort food recipes???
Heck no! I found this recipe from “One Orange Giraffe” and gave it a try.
We’ve been using it for years! Taste better than the store bought, healthier, cheaper… I mean, come on. It’s a no brainer.
Here’s the mix:
1 cup non-fat dried milk
3/4 cup cornstarch
1/4 cup bouillon*
4 Tablespoons freeze dried minced onions
1 teaspoon dried basil
1 teaspoon dried thyme (or dried parsley)
1 teaspoon pepper
To make the equivalent of one can of soup, mix 1 1/4 cup of water with 1/3 cup of the above mix. Heat it over medium heat until thickened.
*If you use cubes, you’ll have to smash them into a powder. I use Orrington Farms Broth Base & Seasoning Chicken — 12 oz
because it’s all natural and has no MSG. (Read the back of your bouillon. You’ll be shocked.) It’s also what I use to whip a a quick broth. Great multi-use product to help you eat more real food!
I like to double or triple this recipe and store it in a pretty container. It’s almost as convenient as the can and SO much better for you! Enjoy!

Boasting in Weakness: My life is not as pretty as this blog. I look at others and wonder how they’re so put together while I feel like I’m drowning.

I went to the gym today for the first time in two months. I was there for an HOUR and a HALF!
I worked out for maybe SIX MINUTES.

Between crying kids, paying late fees, scattering my personal belongings over the entire facility, nursing a baby that I forgot to feed, and being reprimanded for being in a kid zone unescorted; we just had to give up and go home. Then the three year old that had been so upset to go to the gym in the first place, threw a fit when we got home because he wanted to go back. Yea.

So, nope. Don’t have it together.

So don’t let this silly little blog do anything but encourage you. K?
